Instructions
  1. Put a pot of water over medium-high heat and bring it to a boil. Add a couple tablespoons of oil and about a teaspoon of salt. Add 16 ounces of dry pasta and cook according to directions on the box.
  2. Zest the lemon until you have a generous pinch to work with. Combine the lemon juice, olive oil, garlic, oregano, salt and black pepper in a small dish. Stir.
  3. Once the pasta is done, drain it and rinse it with cold water for several minutes until cold.
  4. Combine everything in a large serving dish. Top with parsley and a Feta Cheese substitute if desired. Serve cold.
